Sealant vs thinset for membrane overlaps
It seemed like from the YT video, it was pretty clear that sealant was preferred, without saying it explicitly but are there any downsides? Throw the membrane up with thinset and band with sealant like rapidset non-sag silane sealant on the banding and overlaps?

I have yet to execute a box flood test using sealant successfully, so I can't recommend it. Have yet to see someone else do it, either. I know they do it this way in Europe, but highly modified thinset seems to be the best (ANSI A118.15) for me and my tests.
Like Larry said, you can always do liquid over the top.
