Max applicable thickness of Schluter AllSet
Looks like I might not have my niche in the correct location to allow me to use the Finec-SQ profile since I need 1/2"extension of the wall tile for the tile miter and dry fitting is showing 3/16" extension so I was thinking of just filling the bottom of the shelf with thinset to make it flush with the edge of the wall tile and then just switch to using the Jolly profile.
The thinnest Kerdiboard I have is 5/16" so I can't use it to make up the difference.

Hey Richard. Are you saying that the bottom of your niche is basically 'too low'?
Not a problem. We actually purposely leave the bottom larger. Too high is a huge problem.
I fill that shelf zone with thinset often. Sometimes I pre place spacers in the zone and bury them in the thinset so I cannot push my tile down too far and maintain slope of the shelf.
All set IMO is fine for this.
Assuming I got your issue correct
