Shaping Slab For Curbless Shower

I want to have a curbless, barrier-free shower. My floor is a concrete slab, and I'm considering grinding down the slab to shape the floor to drainage specs. Do you Issac or anyone else here have recommendations for the fastest, easiest method to use to do this? I've got in-slab radiant tubing to be careful of, but I think I'll be ok. The Shower pan area is 48" x 40". Fortunately, the block out in the slab for the p-trap plumbing is 12"x 16" so that reduces the area to be ground down.
I'm thinking about sanding and polishing the whole floor and in that case, how to seal the joint between the wallboard and the floor?

No problem. Run the board all the way down as far as you can, then mud. Yes, only chip out as much as you need to cover, but I like a min of 1/2" deck mud...it makes it easier to screed.
