Wrap tile around window?
I want to fill the void in this picture so I can have a ledge with tile. Can I use the pink foam board and waterproof with red guard, or use something else to fill gap? Entire window frame will need to be filled, so vertical piece needs to be added on left side.
Thoughts on how to proceed?

What you want to do is gonna be some hackery in my opinion. Take that trim and casing off and waterproof around that window properly, then do what you're gonna do with the tile.
