Installing Bathroom Accessories on Porcelain Wall Tile?

I have blocking installed where I want to mount toilet paper holder, towel bars, and shelves. I was planning on drilling through the tiles and screwing the accessories into the backing. Now with literally months invested, the tile saw sold (still have the grinder) I'm nervous about drilling into the tile. I really don't want to crack or break anything or have the bit slip and leave scratches up..down...across the tile surface... I was nervous when the shower glass guys were drilling...I couldn't watch. They did ok, but dang...I don't want to screw something up right at the finish line. I didn't think I'd have any concern about this, but here I am...

The 1/8 bit is pointed and says on the package, may bind and break bit or tile. The larger bits are more like mini hole saws with diamond abrasive on the leading edge and up the sides. Do you use 1/4 inch bits for installing these accessories in tile? Then just stop when you hit backer?

Is Epoxy a suitable alternative for mounting small shelves, toilet paper holder, towel bars to matte porcelain tile?
