Setting a flow effects in a pan
Question...once I level my showers with Levelquik and used spray foam to leave a void between the concrete and the drain pipe....when I set the pan, do I fill in that void with thinset or just leave it open?

I would back fill for sure. Depending on the depth, maybe gravel and concrete. Thinset really should not be applied super thick or it can shrink, but in this case I'm not sure the shrinking is a problem.
Having that drain supported is a must
