What's the best way to install a custom corner shower shelf?

Should I cut the tile so it fits around the shelf like this?

Or should I trim an inch off on either side so the ends lay flush against the tile?

This is marble so can I use modified thin set which what I'm using for the tile or should I use something else?

Also, can I install the shelf as I'm tiling or should this be done once the wall in tiled?
