What should I use in this situation

Okay so I removed the old tiling that had that chicken wire up underneath it attached to the wall(pardon lack of knowledge of tiling jargon lol) and now I have a 2 1/2 inch gap from the end of my floor to the stud. I plan to put up greenboard and im gonna do a white vinyl trim around the bathroom for the baseboards. I'm going to use some 2 inch tiles horizontally across the floor to fill up the gap I created once the floor is built up but my problem is I'm not sure what I can put that will bond to the mortar under the tiles and is safe for the frame of my house. I don't want to end up rotting it out because I use the wrong material.
That brings me to my question. 1) What should I use as a material to build up the floor so I can use my thinset and tiles on top of it and 2) Should I have some sort of a water proofing membrane to protect the studs so they aren't damaged in the future?
I watch the YouTube channel a lot and I'm a huge fan of your work Isaac..although I'm just an average homeowner I really want to improve my skills learning from what I find out in your videos. Thank you all.

Thanks Larry for your help, have a nice Sunday
